The sun doesn't actually set, it's a kind of spotlight that circles above the flat earth and it's some trick of perspective that makes it appear to set. Wen the sun is further away than the vanishing point it appears to dip below the horizon.
Indeed, and I have already linked to a video purporting to explain how this works. Apparently, the sun changes orbit every few months, though strangely no explanation is given as to how this works.
